These Cinnamon Roll Apple Pie Bombs are the perfect fall-inspired dessert—or a sweet treat any time of year! Flaky cinnamon roll dough wraps around a warm, gooey apple pie filling, creating a delicious bite-sized dessert. Drizzled with icing and served warm, these are easy to make and absolutely irresistible!

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced
  • 2 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1 tbsp cornstarch
  • 1 tbsp water

For the Dough & Assembly:

 

  • 1 can (8-count) refrigerated cinnamon rolls (with icing)
  • 1 egg, beaten (for egg wash)

Instructions

Step 1: Prepare the Apple Filling

  1. In a medium saucepan over medium heat, melt the butter.
  2. Add the diced apples, brown sugar, cinnamon, and nutmeg. Stir to coat the apples evenly.
  3. Cook for 3–5 minutes, stirring occasionally, until the apples soften.
  4. In a small bowl, mix the cornstarch and water to create a slurry.
  5. Pour the slurry into the apple mixture and stir continuously.
  6. Cook for another 1–2 minutes until the filling thickens. Remove from heat and let cool slightly.

Step 2: Assemble the Apple Pie Bombs

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line with parchment paper.
  2. Open the cinnamon roll dough package and separate each roll. Flatten each piece into a 3–4 inch circle.
  3. Spoon 1–2 tablespoons of apple filling into the center of each dough circle.
  4. Carefully fold the dough around the filling, pinching the edges tightly to seal.

Step 3: Bake

  1. Place each filled dough ball seam-side down in the muffin tin.
  2. Brush the tops with beaten egg wash for a golden, shiny crust.
  3. Bake for 12–15 minutes, or until golden brown and puffed up.

Step 4: Finish & Serve

  1. Let the apple pie bombs cool for a few minutes before drizzling them with the included icing from the cinnamon roll package.
  2. Serve warm and enjoy the gooey, cinnamon-apple goodness!
