Ingredients
For the Apple Filling:
- 2 medium apples, peeled, cored, and diced
- 2 tbsp unsalted butter
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg (optional)
- 1 tbsp cornstarch
- 1 tbsp water
For the Dough & Assembly:
- 1 can (8-count) refrigerated cinnamon rolls (with icing)
- 1 egg, beaten (for egg wash)
Instructions
Step 1: Prepare the Apple Filling
- In a medium saucepan over medium heat, melt the butter.
- Add the diced apples, brown sugar, cinnamon, and nutmeg. Stir to coat the apples evenly.
- Cook for 3–5 minutes, stirring occasionally, until the apples soften.
- In a small bowl, mix the cornstarch and water to create a slurry.
- Pour the slurry into the apple mixture and stir continuously.
- Cook for another 1–2 minutes until the filling thickens. Remove from heat and let cool slightly.
Step 2: Assemble the Apple Pie Bombs
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line with parchment paper.
- Open the cinnamon roll dough package and separate each roll. Flatten each piece into a 3–4 inch circle.
- Spoon 1–2 tablespoons of apple filling into the center of each dough circle.
- Carefully fold the dough around the filling, pinching the edges tightly to seal.
Step 3: Bake
- Place each filled dough ball seam-side down in the muffin tin.
- Brush the tops with beaten egg wash for a golden, shiny crust.
- Bake for 12–15 minutes, or until golden brown and puffed up.
Step 4: Finish & Serve
- Let the apple pie bombs cool for a few minutes before drizzling them with the included icing from the cinnamon roll package.
