For the French Toast Sticks:

  • 6 slices brioche bread, cut into thick sticks
  • 3 large eggs
  • 3/4 cup whole milk
  • 1/4 cup heavy cream (for extra richness)
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Pinch of salt
  • 2 tablespoons butter (for cooking)

For the Cinnamon Sugar Coating: (Optional but recommended)

  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

For the Maple Butter:

  • 1/2 cup unsalted butter, softened
  • 1/4 cup pure maple syrup
  • 1/4 teaspoon salt

For Serving:

 

  • Extra maple syrup for dipping
  • Powdered sugar (for dusting, optional)

Instructions

1. Make the Maple Butter

  1. In a small bowl, whisk or beat together softened butter, maple syrup, and salt until smooth.
  2. Transfer to a serving dish and set aside. You can refrigerate it for a firmer texture or leave it at room temperature for easy spreading.

2. Prepare the French Toast Batter

  1. In a shallow dish, whisk together eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
  2. Set aside to let the flavors meld while preparing the bread.

3. Prepare the Brioche Sticks

  1. Cut each slice of brioche bread into 3-4 thick sticks.
  2. Dip each bread stick into the custard mixture, letting it soak for about 5-10 seconds per side.
  3. Remove and let excess drip off before cooking.

4. Cook the French Toast Sticks

  1. Heat butter in a large skillet over medium heat.
  2. Place the soaked brioche sticks in the pan and cook for 2-3 minutes per side, until golden brown and slightly crispy.
  3. Repeat with the remaining sticks, adding more butter as needed.

5. Coat with Cinnamon Sugar (Optional)

  1. In a shallow dish, mix together sugar and cinnamon.
  2. While the French toast sticks are still warm, roll them in the cinnamon sugar mixture to coat evenly.

6. Serve & Enjoy

  1. Dust with powdered sugar (if desired).
