Description

This southwest chicken sandwich with chipotle aioli, roasted red peppers and pepper jack cheese is a quick and easy lunch or dinner idea.


Ingredients

For the Southwest Chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Chipotle Aioli:

  • 1/2 cup mayonnaise
  • 12 chipotle peppers in adobo sauce (adjust to taste)
  • 1 clove garlic (minced)
  • 1 tablespoon lime juice
  • Salt and pepper to taste

For the Sandwich:

  • 4 ciabatta buns or roll (sliced and lightly toasted)
  • 2 cups baby arugula
  • 8 slices pepper jack cheese
  • 1 cup roasted red peppers (sliced)
  • Chipotle aioli (as prepared above)

Instructions

Southwest Chicken:

  1. In a small bowl, mix together the olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper to create a flavorful marinade.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated.
  3. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.

Chipotle Aioli:

  1. In a food processor or blender, combine the mayonnaise, chipotle peppers, minced garlic, lime juice, salt, and pepper. Blend until the chipotle peppers are fully incorporated and the aioli is smooth. Adjust the seasoning and spiciness level according to your taste.

Grilling the Chicken:

  1. Preheat your grill or a grill pan over medium-high heat.
  2. Remove the chicken breasts from the marinade and let any excess marinade drip off. Discard the leftover marinade.
  3. Place the chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is fully cooked.
  4. Once done, remove the chicken from the grill and let it rest for a few minutes before assembling the sandwiches. Slice the chicken breasts into thin slices.

Assembling the Sandwiches:

  1. Spread a generous amount of the chipotle aioli on the bottom half of each toasted ciabatta bun.
  2. Place a generous layer of baby arugula on top of the chipotle aioli.
  3. Add the grilled chicken slices on top of the arugula.
  4. Layer with pepper jack cheese slices and roasted red pepper slices on top of the chicken.
  5. Complete the sandwiches with the top half of the ciabatta buns.
  6. Enjoy these delightful sandwiches with a side chips or green salad.
